Amazing Bourbon Pecan Cake!

My Bourbon Pecan Cake is the best cake recipe ever!! Every time I serve this awesome cake I get rave reviews from my family and friends! The combination of bourbon, spices and toasted pecans is irresistible. The buttery bourbon glaze adds an extra PUNCH to this amazing cake.

This cake makes a wonderful holiday or gift cake as it keeps well and in fact gets better with age! It can be baked in mini loaf pans, wrapped with plastic, colored cellophane and then tied with a pretty ribbon. What better gift for the Holiday's or even as a wedding favor.

The ingredients and method for my Bourbon Pecan Cake
Makes 1 10" inch bundt cake or 4 mini loaves.
Bake at 325-350 for 35 minutes or until the top springs back. My oven runs high so I do 325.

Sift together in a medium bowl:
1 1/2 cups of flour
1 teaspoon baking powder
1/8 teaspoon salt
1/2 teaspoon cinnamon
Set aside.

Combine in a small bowl or cup:
2 teaspoons nutmeg
1/2 cup of bourbon
Set aside.

Toast the pecans:
Spread about 2 cups pecans out on a sheet pan and bake at a low temperature until toasted
250 - 300 degrees or so, depends on your oven. Cool and chop finely. You can use a food processor for a finer chop, just be careful not to over do it or the pecans will turn to a paste.

Combine:
1 1/2 cups toasted and chopped pecans
1/2 cup currants with a 1/2 cup of the flour mixture.

In a separate bowl cream together:
1 cup sugar
1/2 cup butter

Separate three eggs - the white from the yolks.
Add the 3 egg yolks to the creamed mixture one at a time:

Mix the wet and dry ingredients together well.

In a clean bowl whip the 3 egg whites with 2 Tablespoons of sugar until stiff but not too dry.

Fold the egg whites in gently.

Pour mixture into a greased and floured 10" bundt pan or he four mini loaves.

Bake until the cake springs back.

Glaze
Mix together in a small bowl:
2 2/3 cups confectioners sugar
1-2 tablespoons cream
1 Tablespoon butter
2 Tablespoons bourbon

After the cake has cooled and removed from the pan pour the glaze onto the cake .
