Best Ever Carrot Cake

by Amanda
(Idaho)

This is the best ever carrot cake! It's my FAVORITE! My sister, who decorates cakes, used this recipe to make me a beautiful two layer birthday cake. It was delicious! She frosted it with a rich cream cheese icing.

1 1/4 C Oil
3 Eggs
2 tsp Vanilla
1 2/3 C Sugar
1 C Well drained, crushed pineapple
2 C All-purpose flour
2 tsp Soda
1 tsp salt
2 tsp Cinnamon
2 C Grated Carrots
2 Cups Chopped walnuts (or pecans)

Preheat oven to 350 degrees. Combine the first five ingredients and mix well. In another bowl combine dry ingredients. Add gradually to the first mixture and mix well. Stir in the carrots and the nuts. Pour into greased cake pans. Bake 30-40 min or until the toothpick comes out clean. Cool completely before frosting.

TIP: You can add raisins! Just take out some of the nuts and replace with raisins.

If you are looking for more carrot cake recipe ideas then check out these gems on this website.

The best carrot cake recipe that I use religiously for family gatherings, wedding cakes over the years and all occasion cakes. People who do not like carrot cake LOVE this one.

The original one with grated carrots.

And this one which is called Moist Carrot Cake has a pecan filling that is amazing. You can use the filling in any of these recipes.

More Tips

Carrot cake keeps very well and can be baked ahead and frozen. It makes for a sturdy wedding cake and can be used for sculpting as well.

They make great gifts at Christmas time. Make small 6 inch cakes, layer and fill with lemon cream cheese icing. Frost with buttercream and decorate.

A simple decoration of toasted coconut or chopped roasted spiced pecans is a nice accompaniment. Box up your cakes and wrap them with ribbon for a beautiful gift.
