Best Ever Carrot Cake

This is the best ever carrot cake! It's my FAVORITE! My sister, who decorates cakes, used this recipe to make me a beautiful two layer birthday cake. It was delicious! She frosted it with a rich cream cheese icing.
1 1/4 C Oil
3 Eggs
2 tsp Vanilla
1 2/3 C Sugar
1 C Well drained, crushed pineapple
2 C All-purpose flour
2 tsp Soda
1 tsp salt
2 tsp Cinnamon
2 C Grated Carrots
2 Cups Chopped walnuts (or pecans)
Preheat oven to 350 degrees. Combine the first five ingredients and mix well. In another bowl combine dry ingredients. Add gradually to the first mixture and mix well. Stir in the carrots and the nuts. Pour into greased cake pans. Bake 30-40 min or until the toothpick comes out clean. Cool completely before frosting.
TIP: You can add raisins! Just take out some of the nuts and replace with raisins.
