Butter Cake Recipes

Perfect butter cake recipes for your wedding day including my top three. An original old fashioned butter cake, an orange butter cake, and the best chocolate butter cake ever for a wedding celebration.



Cakes made with butter are versatile and make a great choice for wedding cakes. They are firm enough to hold up to heavy frosting and decoration and they can be flavored to suit your taste by changing the liquid ingredients and adding elements. Here are the top three butter cakes that I have used for my cakes for over 25 years with great success.


Top Three Butter Cake Recipes

Basic Butter Cake / Pound Cake

This butter pound cake is made with sour cream. By adding lemon zest and lemon juice to butter cake recipes you will have a luscious lemon cake.

Makes two 10" cakes

Ingredients

  • 5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups(unsalted butter(4 sticks)
  • 4 1/2 cups sugar, plus 1/2 cup for sprinkling(dusting or distributing)over the batter before you bake the cake.
  • 6 large eggs
  • 2 1/2 teaspoons vanilla
  • 2 cups sour cream
  • Sift together flour, baking powder, baking soda and salt. Set aside

    In the large bowl of an electric mixer beat the butter until soft and smooth. Add the sugar and beat until light and smooth. Add eggs, one at a time, beating after each addition. Stop the mixer and scrape down the sides of the bowl and the beaters several times.

    With the mixer on low speed, alternately add the flour mixture and the sour cream, beginning and ending with flour. Stir in the vanilla.

    Divide the batter evenly between the pans. Smooth the batter level, then spread it slightly from the center to the edges. Sprinkle (distribute) the remaining 1/2 cup of sugar over the batter.

    Bake in the preheated 350 degree oven for 30-35 minutes, or just until the tops are springy or a cake tester comes out clean. Oven temps can vary, You may have to lower the temperature in your oven. I use 335-340 in mine.

    Cool the cakes in their pans on a rack for 10 minutes. Then invert them onto racks.


    Chocolate Butter Cake

    People often ask, which is better an oil or a butter cake recipe. I have two versions. One is an oil based and this one is butter chocolate cake. They are both incredible but the butter cake is a little firmer.

    Buttermilk is one of my favorite ingredients and is used in this recipe. It helps to make the cake moist and the addition of coffee makes it a WOW! Makes two 10 inch round cakes

    Preheat oven to 350 degrees

    Ingredients

    • 2 1/2 cups all-purpose flour
    • 1 1/2 cups unsweetened cocoa powder
    • 1 1/4 teaspoons salt
    • 1 Tablespoon baking soda
    • 1 Tablespoon baking powder
    • 3 cups granulated sugar
    • 5 eggs
    • 1 Tablespoon vanilla extract
    • 1 1/2 cups buttermilk
    • 3/4 cup unsalted butter (1 1/2 sticks melted)
    • 1 1/2 cups strong coffee

    Sift together flour, cocoa salt, baking soda and baking powder. Stir in the sugar.

    In another bowl combine the eggs and vanilla, then mix them into the dry ingredients. Add the buttermilk, melted butter, and coffee. Scrape the batter into the prepared pans.

    Bake in the preheated oven for 50 minutes, or just until the tops are springy or a cake tester comes out clean.

    Cool the cakes in their pans on a rack for 10 minutes. Then invert them onto a rack.


    Orange Butter Cake
