Hi Lorelie,
I want to make a cake with layers of mocha genache and mousse chocolate frostings. Since i have to slice cake in 3 layers, can i freeze the cake (so it's easier to slice it) and frost it while its frosen. Will it change it's consistency/flav? Can it stay out in room temp from am to pm. ( i been making genache, keeping without refrig. for 2days, since i boile the cream-is it ok, how long can it stay out?) I never made mousse frosting can that sit am to pm? If not i will have to use merengue buttercream.

Yes you can freeze the cake first and slice it. And yes you can fill and frost it while it is frozen. I freeze most of my cakes and as long as they are wrapped well and frozen for a short time (1 to 2 weeks) your cakes will be fine. If you use a mousse filling keep the cakes in the refrigerator for as long as possible until you are ready to deliver and set up.

Crusted Buttercream icing

Hello, I am new here to your site. My question is I made a fresh batch of crusted buttercream do I need to refrig it or can it stay out at room temp. Covered and sealed?

Hi You can leave your buttercream out for a day covered in plastic wrap in a cool spot if necessary. You can also refrigerate it and when you are ready to use it, thaw and re mix. You may have to microwave it for a few seconds to help soften. Always safer to refrigerate, just a little bit more work thawing and remixing.

I would like to make the caramel frosting but your recipe consists of "cups", "ounces" and "tablespoons". I have no idea how big a "cup" should be. Please could you just put everything in ounces of grammes?
