Cupcake Icing question

by Tanya
(Canada)

Buttercream

Buttercream

I have a cupcake icing question. Which one is better for using on cupcakes. Your wedding cake icing or your cake decorating icing?

I want to pipe swirls on the tops. And how long do both of those icings last till they go bad?

Wedding Cake Frosting

Hi Tanya,

The Wedding cake frosting, also know as Italian Meringue, is the one I would use for your cupcake icing.

The cake decorating frosting (also known as royal icing)on this website is great for making snowflakes, flowers, lace, string work and for intricate piping onto fondant.

Both icing's need refrigeration and to be covered well. The decorating frosting has egg white in it and the butter cream does too.It will stay fresh in the refrigerate for a few weeks. The decorator icing (royal) is best used right away but you can re whip it if needed, but you may need to add additional powdered sugar to thicken it a bit. You can freeze the buttercream and it will keep much longer.

Here are a few related cupcake posts for you.

This one is on transporting them.

And a helpful post on preparing 300 cupcakes ahead of time.
