Fondant Icing Storage

Hi Lorelie: How far in advance can I make fondant for a cake? Can it be stored for up to a week in an airtight container? Many thanks oh and does the cake have to be out of the fridge for several hours before I can fondant it? Eveline
Hi Eveline, Yes you can store it in an airtight container. Wrap it really well first in plastic.
No the cake doesn't have to be out of the fridge for any length of time. I have placed fondant on very cold cakes with no issues unless it is very humid in the room. The fondant will get moist and a little shiny. This will dissipate after the temperature evens out.
