Lorelie- How did you get the nickname the Whole Food Lady?

Dawn- After graduating Nutrition School, I became known for telling others that I "only ate whole foods", people began saying...."There's the whole food lady!" all the time, so I thought it was appropriate to name my business after that.

Lorelie-You are a nutritional coach as well as a cook/baker. Do you have a love of baking? What is your favorite thing to bake?

Dawn-yes, I love to bake....my favorite thing to bake are gluten free wedding cakes and all occasion cakes, because they involve a lot of creativity and it's a lot of fun to decorate them.

Lorelie-When and why did you decide to go gluten free?

whole-food-lady Dawn-I went Gluten free about 4 years ago when I found out that I had a severe Gluten Intolerance. I get very sick when I am exposed to it.

Lorelie-What exactly is a gluten free product? Can anyone benefit from a diet that is gluten free?

Dawn-The grains Wheat, Barley, Rye, Oats and Spelt all have the form of gluten present in them to trigger allergic immune responses in certain individuals. I believe that the Gluten Free diet is a very healthy one and that everyone could benefit from either cutting it out of their diets or cutting back on it.

Lorelie- Where did you get your training and how long does it take?

Dawn-I attended the Institute for Integrative Nutrition through Columbia University. The program is just about 2 years long.

Requests For Gluten Free Wedding Cakes

Lorelie-Do you get a lot of requests for gluten free wedding cakes? If so do you have a photo you can share? And what flavor cakes do you make?

Dawn-Yes, I do lots of gluten free wedding cakes...I can do just about any flavor you request, Chocolate, vanilla, carrot, banana, lemon, strawberry shortcake, you name it!

Lorelie-Would you consider yourself to be creative and if so are there other outlets for you besides baking and decorating? Do you have a gluten free bakery?

gluten-free-bakeries Dawn-I am a very creative person, I love to cook and bake and anything that has to do with food and food preparation. I teach cooking classes as well as counsel nutrition in person and on line. I do on-going Weight Loss Competitions on line, they are so much fun! I bake out of a cafe that I helped create called Cogolulu Cafe. It is the first 100% Gluten Free cafe in Fairfield County CT

Lorelie-I see you offer classes. How many people per class and what can a student expect when they take a class with you?

Dawn-I usually have maximum 15 adults or 8 kids in each class. My classes are unique in that I only teach Gluten Free food prep. Each student gets hands on training and a yummy meal, with dessert afterward!

Lorelie-What are your parties like? And how many people will you usually have in a party?

Dawn-A cooking party is quite similar to a cooking class, only it is conducted in a person's home. It is quite fun, and the students usually bring their own wine and make it into a dinner party!

Lorelie- I love the idea of an online weight loss challenge( I am also a personal trainer) so am interested in this as well. Sounds like fun. Can you tell us more about it?

Dawn-yes, it is TONS of fun! I set up an online competition and everyone gets to compete for weight loss. During the 6 weeks, I will host the contest and give out Nutritional advice, weight loss tips, recipes, meditations, shopping tips as well as having all the support from the other contestants. At the end, whomever loses the most percentage of weight, wins a cooking party! Average weight loss has been 15 - 25lbs in the 6 weeks.....people have been quite pleased!

Lorelie-Do you have any advice for people considering going into a small business venture selling food products?

Dawn-yes, use QUALITY ingredients no matter what. Our food system is terrible and we need more people selling food that is real so we can all stop getting sick!

Lorelie-Any bridal advice you can share for my bride readers? Advice for bakers or cake decorators?

Dawn-Brides, marriage is the BEST thing you can ever do, this is such a special time in your life, cherish every moment! Bakers and cake decorators, this profession is also the BEST! ;) I might be a bit bias, as I am a happily married baker and cake decorator!

Lorelie- Can you share a gluten free recipe with us. Something sweet, maybe an idea for a homemade gluten free wedding favor. (cookies or something that can be wrapped up and tied with a ribbon to give to the guests etc.

Gluten Free Banana Muffins

  • 1.5 sticks butter
  • 1 Cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 ripe bananas
  • 1 cup almond flour
  • 1 cup brown rice flour
  • 1 tbs baking powder

Mix wet ingredients first, then add dry to the wet and mix thoroughly. bake at 350 degrees for 30 minutes.
