Make Your Own Wedding Cake

Make your own wedding cake? Sure, making a wedding cake is easy as pie! Not really, but with a little practice you can do it. Take a look at wedding cakes you can make. Even making a fondant wedding cake is not out of the question. I will show you how.

If you plan ahead and enlist a friend or relative to help out, you can do it. Making a wedding cake doesn't have to be complex. In fact my own wedding cake was a simple sheet cake with two penguins on top...don't ask...

How To Make Your Own Wedding Cake

from start to finish...



My tutorial videos are for brides to be and aspiring bakers/pastry chefs alike. They are step by step and easy to follow directions on how to make your own wedding cake.

Are you thinking of starting a cake business? Follow my tutorials and learn just what it entails. You will want to try more advanced skills at some point but you can start of with a simple wedding cake.




What Size Should My Wedding Cake Be?

small wedding cake Once you know how many guests you will have you can decide on the size of your cake. I have a wedding cake servings chart here. If it is a large crowd than you may want to consider making extra cakes for the kitchen and reducing the size of the actual wedding cake. It's easier to manage a small wedding cake.

I would consider a small wedding cake to be a two tier or even a three tier cake using smaller cakes, as in the polka dot cake to the left.

Let's say you have 125 - 150 guests. Consider having a 12" cake for the bottom tier a 9" cake for the middle and a 4-6 " on top. This would feed about 75 guests, plus a small sheet cake in the kitchen for cutting.

The kitchen staff will love you because they will be able to be more efficient with cutting and serving the cake, and you can be proud that you made your own wedding cake.

Pillars make the cake appear larger.

If you raise the top tier onto pillars, add flowers around the bottom tier and a cake topper your cake will look larger.

I try to stick with a four inch difference between cake sizes for the tier structure.

It's not always possible as in the example above. I used 12", 9" and 6" cakes.

The cakes to the right are 14", 10", and 6" with 7" pillars. This is one of my early cakes(circa 1980)

Simple Wedding Cakes

If you are going to make your own wedding cake, keep it simple. A wedding cake doesn't have to be complicated. The icing can be textured so that you do not have to worry so much about making it smooth. Coconut fruit or chopped nuts can be used as garnish and to add an interesting texture to the cake. There are lots of ways to keep it simple yet beautiful.

Making Wedding Cakes

Here Is What You Will Need To Make Your Own Wedding Cake

  • Wedding cake pans-This depends on your oven size. 12" 9" and 6" would fit in most ovens. 14" 10" 6" in some ovens.
  • Waxed paper or parchment paper for lining the pans.
  • A dowel rod for the center of a stacked cake.
  • Straws for supporting each tier, or dowel rods if it is a larger cake (14" 10" and 6") or more.
  • Cardboard rounds, two for each cake.
  • A base to put the cake on, such as the Wilton decorative cake base.
  • If the bottom cake is 14" and stacked, I would suggest going to the lumber yard and asking them to cut you a board which you can cover with silver or gold paper. If it is pillared than you can use the Wilton decorative cake base.
  • Or you can double up on the Wilton cake bases and then place the cake on a silver cake plateau or other fancy cake stand at the banquet hall.

  • A glue gun for gluing the base of the cake (which is on the cardboard round) to the decorative base.
  • Plastic wrap or plastic bags, or both to wrap the baked cakes in the freezer or refrigerator for storage.

  • A cake style or design that you are planning on using.
  • Any ribbons, bows or other embellishments.

    Wedding Cake Tutorials

    make-your-own-wedding-cake I am using an actual wedding cake example to show you how to make your own wedding cake. The cake is in the picture to the right. It is three tiers with no pillars. The bride and groom prefer the stacked cakes and wanted a simple design with orchids on top. They chose carrot cake with lemon cream cheese filling.

    The cake was baked during the week and then frozen. Freezing does not take away from the freshness, in fact it actually helps to make the cake moister and much easier to work with as long as it is wrapped well.

    Up to two weeks before the wedding date:

    Bake the cakes, wrap and freeze.

    Up to one week prior to the wedding date:

    Make the filling and frosting.

    During the week of, preferably a couple of days before the date:

    Fill and crumb coat the cakes, put the cakes back into the freezer or the refrigerator.(I prefer to keep them frozen)

    The day before or up to two days before:

    It's time for the final frosting stacking and decorating of the cake.

    You will have to make room in your fridge now for the stacked cake by removing some of the racks.

    Tip At this point you don't have to cover the cake. The butter cream seals in the moisture, Just make sure their are no funky odors lurking in the fridge as the buttercream willl absorb the smells and the taste. If you prefer to cover it, wait until the buttercream hardens and cover lightly with plastic wrap.
