Pound cake

Hi Lorelie! I have a question for you. I noticed that some people make pound cake for their wedding cake. What is the difference? What is the benefit? Is it a cake fit for the sculpting? Thank you! Hi Carolanne, Yes, because a pound cake is generally firmer with less crumbs it makes a good choice for sculpting. But I have found that any cake that is chilled enough and then coated with buttercream can be used for the purpose of sculpting. Of course it would depend on how elaborate of a cake sculpture you are doing.
I find that this carrot cake recipe which is one of my favorite cakes is quite firm. This Madiera Cake Recipe is a great choice if you need a good firm cake recipe for sculpting.
