Second Time Making A Wedding Cake

This is my second time making a wedding cake! My sister in law Cathy's wedding cake.

When Cathy announced her engagement back in December, it never crossed my mind that I would be making the wedding cake, as I have only made one in the last year or so.

My first wedding cake had been a project for my wedding cake class..lol

Cathy's wedding cake design came from a magazine that she had come across. My first thought was "Oh my lord, there's intricate piping of scrolls and fresh fruit involved". How does one work with fresh fruit placed on top & around the cake?

The Wedding Cake Topper


The topper would be bride and groom strawberries and three other strawberries placed on the second tier decorated to match the girls dresses (to represent the bridal party).

Chocolate Dipped Strawberries Questions


  • Will the strawberries bleed when I puncture them with toothpicks to keep them in place??

  • When does the cake get stacked at home or at the venue?

  • Will it travel without any events or melting?

So many questions, so many unknown factors. I love checking out LOTS of cake decorating books from the library for my own pleasure, to see how the experts do things. I must say I did pick a few useful tips & facts when dealing with wedding cakes.

Cake Board Tip


  • One important tip, that makes so much sense, is to clean your cake boards with isopropyl alcohol(IPA) or any white alcohol like gin or vodka. It removes any dust & prevents bacteria that causes mold to form between the cake & the board.


Baking And Decorating The Cakes


The first thing of course was baking the cake, which turned out beautifully.

Once the main cake board was decorated with fondant, the edge stamped with a pretty design & ribbon place around the cake board, I moved on to the next task. Just seeing the cake board looking pretty gave me the energy & confidence that I could do this cake!!

Looking at the final product assembled & looking pretty I could take a deep breath of relief. Yes, I know its not over 'till the delivery is made..lol

Delivering The Wedding Cake


The cake made it to the venue safely. The bride was so happy! It was very touching when I showed her a photo of her cake and tears came to her eyes. I stood there in amazement at her reaction & the kind words she said to me!! That special moment, made everything alright. What ever doubts I had while making the cake...Pufff they disappeared at that instant...lol

My Heart Skipped A Beat...


When I got to the venue & ran to see the cake, my heart skipped a beat & I felt disapointed. I was only allowed to deliver the cake to the lobby, so I had no control over the final touches. I wasn't happy about that at all, but that's the way things were arranged.

Looking at the cake on the table it did look very pretty but as I got a closer look I noticed that there was some melting. I don't know what happened? Looking back at the photo of the cake before taking to the venue, it was perfect.

At the reception my spirits were uplifted a wee bit by the wonderful people who came to my table guided by the bride herself to introduce me to them. They cheerfully complimented me on the cake & how surprisingly delicious & light it was..it had the WOW factor!!
