Champagne Spiced Pecans Recipe From My Kitchen To Yours
Add this spiced pecans recipe to your Christmas baking recipes list. These little champagne spiced jewels can be made even more special by dipping or drizzling them in Ghirardelli chocolate
Mix together in a large bowl 3/4 cups of champagne of Sherry. You can substitute water if you like.
6 egg whites
3 cups of sugar
3 teaspoons of cinnamon
2 teaspoons of ginger
3 teaspoons of salt
Add 5 lbs of pecans (You may be able to get more then 5 lbs. coated with this recipe so have a few more lbs. on hand just in case)
Mix all of this by hand until all of the pecans are well coated.
Spread them on sheet pans that have been sprayed with Pam and bake at low temperature for 1 1/2 hours or until golden. You may have to roast them longer. Check them a couple of times during the roasting process and using a spatula carefully scrape them up and mix them around a little. When you remove them from the oven to cool do one last scraping. Let them cool completely. Store in airtight containers until you are ready to package them.
These can also be wedding favors you make yourself. You can make them ahead, package and freeze them. Bag them in pretty little favor bags tie them with ribbon and maybe even give out the recipe as a special thank you to your guests. Watch the video. I give examples of packaging!
