Triple Chocolate Cake Recipe

A triple chocolate cake recipe, perfect for a chocolate wedding cake, with layers of rich chocolate mousse, buttermilk chocolate cake and Ganache.

This triple chocolate cake recipe makes a small wedding cake consisting of two layers each of 12, 9 and 6 inch round or square cakes.

If you want to make a larger cake you can simply multiply the recipe. Here is the original version x 1 of this chocolate cake recipe.

Preheat oven to 350 degrees

Ingredients

  • 7 cups all-purpose flour
  • 8 cups sugar
  • 3 cups cocoa
  • 8 teaspoons baking soda
  • 4 teaspoon baking powder
  • 4 teaspoon salt
  • 2 cup oil
  • 8 eggs
  • 8 teaspoon vanilla extract
  • 4 cups strong coffee(water can be used but the coffee is sooo much better) You can use instant if you don't feel like making a fresh pot.
  • 4 cups buttermilk

For this much batter, which is 22 1/2 cups, you will need a large mixer.

If you work at a restaurant or bakery where they have large mixers than you will be able to mix all of this at once, but since most of you do not have one this large, you will have to split the recipe and mix it in batches.

If you have a 4 quart Kitchen Aid you will have no problem fitting the recipe x 2 in the bowl.

Chocolate Mousse Filling

I use a fluffy rich chocolate mousse filling and sometimes a layer of raspberry or apricot jam on each layer.

To make the Triple chocolate cake recipe fill your cake with my chocolate mousse cake recipe filling. The chocolate mousse recipe is here with complete instructions and photos. Multiply the recipe for large cakes.


Ganache Frosting

  • 1 cup of heavy cream (heat over medium heat in a double boiler)
  • 8 ounces of chocolate - add chopped up chocolate to the heateed cream and stir until melted.
  • 1 1/2 Tlbs. of corn syrup (add and stir until shiny)

You can use it warm to pour over a cake. Cooled and whipped as a frosting and filling. Multiply this recipe if needed.
