Type of cake for tiered cakes
by Connor
(USA)
Hi I was wondering can you use any type of cake for tiered cakes without it sinking in? Hi Connor, I think you mean sinking in while baking? If so it is not usually a problem as long as the cake is mixed properly, baked at the correct temperature and long enough so that the center springs bake when done. You can try using a heating core which you can probably find here at Candyland Crafts or your local baking and crafts store. Most cake recipes can be used for a tiered wedding cake. Some recipes are firmer than others. A cake recipe that uses butter is usually a good choice for a wedding cake as the cake will be firmer when cooled. There are a three recipes that I use most often, the chocolate buttermilk cake. It is not the firmest but I make sure to fill it with something that will be firm when chilled, such as a buttercream.
The best carrot cake recipe, with cream cheese filling.
The white wedding cake recipe.
If you mean sinking when stacked... With dowels or a support system within the cake you will be fairly safe with almost any cake recipe. There is a Cake Stackers system that I started using recently. Here is the review page. I highly recommend it if you want to be stress free when delivering and supporting your cakes.
Hope that helps you out. Thanks for visiting.
