Vegan Wedding Cake

by Michele Owen
(Beachwood OH, 44122)

The bride and groom requested a vegan wedding cake with a starry night theme. Given the fact that it was almost ninety degrees and humid the vegan icing was quite a challenge.

Adding arrowroot and agar helped. Now I have found powdered soy milk which I will use as a stabilizer for vegan buttercreams.

Michelle thank you for your vegan wedding cake picture and tips. It's very sweet. Would you like to add the recipe for it and your icing? If so use the comments form to do so. Thank you for sharing your Starry Night wedding cake with us.

Here is the recipes I used for Starry Night.
The frosting is adapted from an old fashioned cooked buttercream and the cake is adapted from Cupcakes Take Over The World.
Vegan Buttercream
2/3 cup sugar
1/4 cup flour
1/4 teas cream of tartar
1/8 teas agar powder
1/4 teas salt
3/4 cup unsweetened coconut milk
1/2 cup earth balance
1/2 cup unsweetened coconut cream

Place sugar, flour, cream of tartar, agar, and salt in a saucepan and whisk thoroughly. Slowly whisk in coconut milk. Cook over medium heat stirring constantly until very thick. Remove from heat and pour into a mixing bowl. Cool in fridge about an hour. take out and beat mixture on high for a few minutes. Begin adding earth balance and coconut cream a couple of tablespoons at a time. Continue beating until creamy. Add vanilla. Chill for a about 30 minutes.

The chocolate cake came from a recipe in Cupcakes Take Over The World. I substituted coconut milk for the soy and added chocolate extract.
I hope this helps.

Thank you so much

Cascading Cassada Cake

by One of Wedding Cakes For You Readers

Cassada Wedding Cake

By an anonymous reader.
My Aunt made this fabulous cake for us from scratch. It's a cassada flavor with strawberry custard and whip cream frosting.

I've always had cassada cake for special occasions and it was very fitting for our wedding day! The flowers are silk pink roses bought at a craft store and the baby's breath is real. The topper is called "promise" from Willow Tree.

My Aunt designed and decorated the entire thing and the table. The initial reason for the cascade design was that the tiers were too heavy and the whip cream too soft to stack them on top of each other. I am so glad a technical detail made our cake look so elegant!

Love your floating design!

Hi Thanks for sharing your wedding cake picture with us. Your Aunt did a beautiful job. What a great idea to use the cascading floating stand for a cake that is very delicate. Nice alternative to the usual as well.

Mad Hatter Wedding Cake

by Heather
(Kuna, Idaho)

I made this cake for my son's wedding.

The colors of the wedding were black and white with splashes of green. The bride gave me free reign.

I made my own marshmallow fondant because my son doesn't like traditional fondant. It was super easy and fun.

The topper was a calla lily, my daughter-in-laws favorite flower, even though she is allergic to them.

Heather Thanks for adding your cool Mad Hatter design. It's very festive. I really love the pink and green with the buttons on the bottom tier. I agree with your son, the marshmallow fondant is very tasty.

Simple yet elegant wedding cake

by Julie
(Tinton Falls, NJ)

This cake was done by Chocolate Carousel in Belmar, NJ. My daughter wanted something simple to go with the piece she chose for the top. They did a fabulous job of pulling that off- some say it needs color, and I thought that too at first, but the more I look at it, the more I say "no, it's beautiful, they got it right"

Thank you Julie for adding your daughters elegant wedding cake. It's simply perfect

Small Wedding Cake

by Barbara McCorkle
(Charlotte, NC, USA)

A Small Wedding Cake but Big on Style and Taste

Baking and decorating is my new passion!

This precious mini wedding cake was my first attempt and I believe I am truly addicted now.

It is almond flavored with strawberry buttercream filling. Yummy. It was served as a centerpiece for a tasting. I have my first real wedding cake to bake next month and I am really excited.

I have been on the web site tutorials and studying hard with my favorite pastry chef's guidance. I know it will be a fantastic creation.

Hi Barbara, It may be small but it is large on style and taste. Thank you so much for sharing your new passion with us. I think we all relate to that here.

Please share your first "Real cake" with us when it is completed. Thank you

First Wedding Cake

by Amy Robertson
(Honduras)

Here is a pic of my cake. Not perfect, but not bad for a first try I think, and definitely delicious!! Your recipe really saved me!

I have a cupcake catering business, and friends asked me to make a traditional wedding cake for them. I tested several recipes before finding your site, and your white butter cake recipe was PERFECT!

I added almond flavoring, a little bit of ground almonds, and soaked it with a little amaretto. Everyone absolutely raved. Thank you again for sharing your knowledge!

Hi Amy, Thank you so much for sharing your first wedding cake with us. Very nice and I am quite sure delicious :-) I'm so glad that you found Wedding Cakes For You. That recipe is tried and true and I use it for my own wedding cakes all the time. I love that you added your own twist to it with the Almonds and Amaretto. I will have to give that one a try.

Thank you for taking the time to share it with us.

Spring Garden Wedding Cake

by Michelle Ousby
(Yuba City, CA)

I just adore creating gum paste sugar flowers, and the more realistic I can make them look the more I love them. Most flowers are created free form and each petal is hand painted using multiple colors of chalk pastels, and occasionally petal dusts.
Happy Decorating......

That's a WOW!! Michelle :-)
Thank you for sharing this phenomenal wedding cake with very realistic fondant flowers. Amazing!

Black and White Wedding

by Tia Hewuse
(Tomah, WI )

My name is Tia Hewuse, I made this black and white wedding cake for my sister. I am 18 years old and have just graduated high school. I will be attending Webster University, in St. Louis, MO in the fall for art, but will continue my love for the pastry arts as well.

I owe it to Grandma

I was 12 when I was first taught by my wonderful grandma. My grandmother was a professional cake decorator for many years and I owe everything I know to her. Word is getting out about me and I have decorated several birthday cakes and two wedding cakes!

I cannot legally charge money for my cakes, so I tell those who ask for my services that they they may make a contribution to my college fund which they do out of the goodness of their hearts.

My sister asked me to make her wedding cake which was held in May. It was rather small wedding compared to the size of cake that she wanted. Lucky for us we have a lot of family that love sweets.

Flavors and Color and Theme

The flavor was the normal chocolate and yellow cake, but it also had strawberry and raspberry filling. I chose to use pie filling because it is so tasty and adds great moisture to the cake!

Her colors were black, silver, and white and her theme was hearts. The fake flowers on the cake are the same flowers from part of the bride’s bouquet. I protested against putting fake flowers on the cake but, the bride got what she wanted.

The feel that I wanted people to get from the cake was simple elegance. The flowing ribbon from the top pillar to the floor tied in this theme. The black stripe around all of the tiers is made from fondant which I have found to be the most convenient and easy way to make a ribbon cake. TIP: Using fondant instead of real ribbon is nice because you can cut the cake without ruining the beauty of it and having to take it apart. The cake is frosted with buttercream frosting. It was so much fun to make! I hope you like it!

Redneck Wedding & Groom Cake

by Anne Thomas
(Loganville, Georgia)

Redneck Wedding Cake

Redneck Wedding Cake

I made these cakes for my granddaughter and her husband, she had no idea what she wanted, just something pretty....so I just took what she and he liked and made it into cake. Their favorite movie was Big Fish, Little Fish and I took their favorite quote and wrote it on the cake.

I found the perfect topper to go with it on Ebay. The hubby is an avid Carp fisherman and you should have seen the look on his face when he saw his chocolate creme-filled carps swimming in a lake of chocolate covered strawberries....let's just say that I was voted BEST GRANDMOM!!!
