Funky and Fun Winter Wedding Cake

I made this cake for my daughter's wedding in November. She wanted something fun funky and young, and I wanted to do something a bit different from the usual wedding cakes.


It was a four tier chocolate madeira sponge, filled with white chocolate buttercream and covered in Belgian chocolate ganache. I covered it in white fondant, and then attached rice paper cut in the shape of leaves.

I attached the leaves to the fondant using royal icing, then sprayed the rice paper lightly with confectioners glaze to give it a nice shine. I then lightly dusted the leaves with white sparkle.

I attached lights to the base of the cake, and it looked just like a winter wonderland of icicles, even though I say so myself!

All the guests loved it and there wasn't a crumb left at the end of the night.
