Crumb coating

I am making a birthday cake and icing it with strawberry cream cheese frosting. Can you please tell me what I use to crumb coat the cake with before hand. Thanks Helen

Hi Helen you can use the strawberry cream cheese icing to crumb coat or a plain icing . You could also use a jam or preserve. That would be a nice touch. Anything that will hold the crumbs onto the cake so that they wont get into your finished icing.

Crumb coat with Italian meringue buttercream

I had a question regarding my butter cream from splitting .
I chill my cake before I crumb coat and after . But when I take out my crumb coat and chilled cake to do the finishing layer if Italian meringue buttercream. It splits cuz if the temperature difference. But if I don’t and j use my bench carpet it crapes off the crumb coat.
What am I doing wrong.
