Hi Lorelie:

How far in advance can I make fondant for a cake? Can it be stored for up to a week in an airtight container?
Many thanks oh and does the cake have to be out of the fridge for several hours before I can fondant it?

Hi Eveline, Yes you can store it in an airtight container. Wrap it really well first in plastic.

No the cake doesn't have to be out of the fridge for any length of time. I have placed fondant on very cold cakes with no issues unless it is very humid in the room. The fondant will get moist and a little shiny. This will dissipate after the temperature evens out.

Fondant Recipe Shelf Life?

When making your own Fondant recipe, how long will it last? We usually do a lot of accenting with fondant and would make one recipe but not always use it all that day. Thank you

Hi Dawn,
If you wrap the homemade fondant REALLY well it should last a few weeks, possibly more. But it does dry out easily and quickly if any air gets to it. The best thing to do is put some Crisco on the leftovers wrap well in plastic and then put it in an airtight container.

How much fondant to purchase?

What is the best way to determine how many pounds of fondant to buy?
Hi Barbara, I use the chart in Collete Peters Wedding Cake Book to estimate how much fondant I need for a cake.

6 inch 1 1/3 lbs.
8 inch 2 lbs.
10 inch 2 1/3
12 inch 3 lbs.
14 inch 4 lbs.
16 inch 5 lbs.

She also has the amounts needed for square cakes, heart cakes and oval cakes.

This assumes your cakes are 3 1/2 inches high. You will trim away some of the fondant which can be reused.
