Italian Meringue Buttercream.

Hello,
If I frost a cake with Italian Meringue Buttercream.
Can I put it in the refrigerator to harden so I can put fondant over it? I want to make a unicorn cake and I might do a silhouette shaped unicorn head out of fondant and the mane as well. I also have to travel with this cake about 3 1/2 hours. So I thought keeping it in the fridge overnight might be a good idea? What do you say? If I make this on a Fri and it won't be eaten until Sunday is that ok? Should I put it back in the fridge after I arrive at my destination? Or if it is still cold outside would that be good enough to keep it out if temperatures are in the 40's?
Any help would be GREATLY appreciated
