Banana Cake Recipes

Banana cake recipes make yummy and unique wedding cakes too. I have included a tropical version with crushed pineapple.

This is a Wow! It is one of the best cakes I have ever tasted. A light peanut butter buttercream makes for the perfect finishing touch.

Best Banana Cake Recipe

Prepare two or three 8 inch or 9 inch pans with shortening and a dusting of flour plus waxed or parchment paper lining. 


1 1/2 cups mashed ripe bananas
2 teaspoons lemon juice
3 cups flour
1 1/2 teaspoons baking soda
1/4 teaspoons salt
3/4 cups butter(softened)
2 1/8 cups sugar
3 grade A large eggs
2 teaspoons vanilla
1 1/2 cups buttermilk


Combine the mashed Bananas with the lemon juice. Cream the butter with the sugar until light and fluffy. Beat in the eggs one at a time and then stir in the vanilla. Scrape the bowl. beat in the dry ingredients alternately with the buttermilk and vanilla. Scrape the bowl. End with the flour mixture. Scrape again. Stir in the bananas and lemon juice. Fill your prepared pans 1/2 to 2/3 full. Bake at 325-350 degrees depending on your oven.

OPTIONAL: Peanut butter buttercream. Simply add your favorite peanut butter to your favorite buttercream frosting recipe. Sprinkle walnuts on top for added crunch.

Quick Banana Cake Recipe

From Pillsbury-The Complete Book Of Baking.  It's always been a reliable source when I needed it. Makes two 9 inch round cakes or one 13 x 9 inch pan.

Preheat oven to 350 degrees


1 cup granulated sugar
1 cup butter

2 eggs
1/2 cup buttermilk
1 cup mashed bananas
1 teaspoon vanilla extract
2 cups sifted all-purpose flour
1 cup rolled oats
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 (6 oz. pckg. semi sweet chocolate chips)
1/2 cup chopped nut


Combine sugar, butter, eggs and mix well;Stir in buttermilk, bananas, and vanilla; blend well.
Stir in flour oats baking soda and salt; mix well. Stir in chocolate chips. Spread the batter in pans and sprinkle with chopped nuts if desired. You can also add the nuts to the batter.

Divide the batter evenly between the pans. Smooth the batter level, then spread it slightly from the center to the edges.

Cool the cakes in their pans on a rack for 10 minutes. Then invert onto racks.

Pan Prep
I use either a spray oil or Crisco to grease the pans well, followed by a dusting of flour, followed by a layer of parchment paper or waxed paper that has been cut to fit the pan. That's it. No need to re-grease and flour the waxed paper as some cookbooks will ask you to do.

Tropical Banana Cake Recipe

Preheat oven to 350 degrees
Tube pan or two 8 or 9 inch pans


1 cup butter

3 eggs
2 cups sugar
1/2 cup milk
1 1/2 teaspoons vanilla extract
1 8 ounce can crushed pineapple with juice
3 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
2 bananas diced


In a large bowl, cream together the butter and sugar. Beat in the eggs, then milk, vanilla and pineapple, along with the juice from the can.

In another bowl, stir together the flour, baking soda, salt, and cinnamon, beat into the creamed mixture. Stir in the bananas.

Turn the batter into the prepared pans. Bake at 350 for 1 hour and 10 minutes, or until the cake tests done with a toothpick.

Cool the cakes in their pans on a rack for 10 minutes. Then invert onto racks.

Wedding Banana Cake Recipes

ALTERNATIVE: To make a very moist banana cake recipe for a wedding cake, follow one of my butter cake recipes then fill your cake with whipped cream and sliced bananas. Make it one step better by adding sliced strawberries.
